Pulled Lions Mane Bun

Ingredients

  • 300g fresh Lions Mane Mushrooms

  • BBQ Sauce 100ml (Store bought or homemade)

  • Burger Buns or toast

  • Baby Gem salad

    For The Coleslaw:

  • 100g Cabbage

  • 100g Carrots

  • 50g Red onions

  • 10ml White wine vinegar

  • 70gg Mayonnaise (You can use Vegan too)

  • Salt and pepper for seasoning

Directions

  1. Pull your Lions mane into chunks

  2. Soute it in a hot pan with oil

  3. After golden brown add the bbq sauce and put it on the side

  4. Mix your ingredients for the coleslaw

  5. Assemble the bun

  6. Enjoy!

Mushroom Ramen

Ingredients

  • 150g fresh Lions Mane Mushrooms

  • 150g Fresh Pink Oyster Mushroom

  • 150g Wood Ear Mushroom

  • (You can choose other types of mushrooms)

  • 2 soft boiled eggs marinated in soya sauce

  • 400ml vegatable broth

  • 1 pack Ramen noodles

    Toppings:

  • Cherry tomatoes, sprouts, chives, sweetcorn, radish, bamboo shoots, pumpkin seeds

Directions

  1. Pull all your mushrooms into chunks

  2. Soute it in a hot pan with oil

  3. Cook the ramen noodles in a separate pot

  4. Warm up your vegetable broth

  5. Add the broth than the noodles into a bowl

  6. Top with the mushrooms and toppings (you can add with other ingredients that you like)

  7. Finish with truffle oil and a pinch of paprika

  8. Enjoy!
